We Certainly Are Eating Well....

Just wanted to let you know, we don't go hungry up here.

A couple weekends ago Sylvia made an Enchilada Dinner for all of us.  She made Enchiladas & Beans and Glenn made the Spanish Rice.

Here's Harry & Sylvia setting out the feast.  Harry works with me & Sylvia works across the street in the store with John, they're our next door neighbors at the RV park too.  Sylvia even made me my own batch of enchiladas with a pack of Bison I had....how sweet is that??  :)

Then last Saturday, I conned Glenn in to giving me Curry Cooking lessons.  Glenn is a retired Executive Chef from a 5 Star Hotel in Florida.  I bought the ingredients and we went over to Glenn & Gus's RV for Margaritas and cooking lessons.  Harry & Sylvia joined us too.

Dinner was AMAZING!  A salad with a peanut sauce & chicken in a red curry sauce with coconut rice and vermicelli. 

I just want you all to understand when we return carrying an extra 20 pounds on our bodies.  Seriously though, we're having a blast & we've made some wonderful friends here   :)
